Egusi Soup and Eba

Egusi soup is one of the most popular soups in Nigeria. This soup is made from melon seed and it’s very tasty, rich in protein and fat. 

Typical Antiguan Weekend Foods

Usually on Fridays and Saturdays many Antiguans take a break from the kitchen and venture out to local eateries to grab a bite to eat. Below are some of the typical foods that are usually consumed on the weekends in Antigua. All photos are the property of S.Davis and not to be used without my permission.

Milk Tea


Tea mixed with milk.  Milk tea is commonly consumed in England, Ireland, Scotland, Canada, India, Sri Lanka and Hong Kong. There are many variations on milk tea, including a cream tea prepared with heavy cream (found in East Friesland, Germany), a type of tea prepared with evaporated milk (known as Hong Kong Milk Tea or Pantyhose Milk Tea), the tea latte (found in North America, parts of Europe and beyond), and milk tea that is boiled with cow milk, buffalo milk or yak milk (found in many parts of India and surrounding countries). Bubble tea, also known as pearl milk tea or boba milk tea (found in Taiwan).
Milk tea is usually prepared with a strong black tea. The addition of milk results in a less astringent, less bitter flavor, in part because the milk covers up the flavor of the tea and in part because the milk binds to some of the bitter chemical compounds found in tea. (Some of these bitter compounds are very beneficial to the health, which is why, if you're drinking tea for health reasons, tea without milk is a better choice.).

Steak and Peppers
-Stir cornstarch, broth, soy sauce and garlic powder in a small bowl until the mixture is smooth. 
-Stir-fry the beef in a 10-inch nonstick skillet over medium-high heat until it's well browned, stirring often. Pour off any fat.
-Reduce the heat and add the pepper and onions.
